In the summer months get the wholesome goodness of the flavour of the season-mangoes. This very seasonal dessert has been made healthier by replacing condensed milk with skimmed milk, without changing the consistency and taste.
Ingredients
- 200 g castor sugar
- 15 ml lemon juice
- 330 g mango (puréed)
- 1 lt skimmed milk
- 15 g cornstarch
- 6 eggs, beaten
- 1/8 tsp salt
Method
- 1.Take a baking pan over medium heat, mix the sugar and lemon juice. Cook and stir until caramelised. Remove from heat, and blend in mango, milk, cornstarch, eggs and salt.
- 2.Set the pan with mango mixture into a container with water (to make a water bath) and place in the preheated oven. bake for at least 45 minutes at 175° c or until firm. cool before de-moulding and serve chilled.
